#WeekendCoffeeShare Blog Hop – I’m a Newbie

This is a mug I shared with my dear friend, Michele Bergh, on our road trip to the North Shore last Fall. Well, we didn’t technically “share” it. (That’d be kinda weird.) But, well, you know what I mean.

Hi there. Welcome to my virtual dining room where I have invited you over for coffee. At least, that is the theme of the #WeekendCoffeeShare blog hop that I am sharing in today.

If we were having coffee, I would sit you down and make you try one of my latest desserts that is (relatively) sugar free but super delicious. It’s good old-fashioned chocolate no bakes. You know the kind you make in the freezer with big blobs of hot chocolatey oatmeal peanut butter mixture? I’ve been toying with a way to make it sugar free and I’ve come up with something that I think you might like – especially if you love sweets like I do! Or, at least you might like if you like gooey chocolate. I make it with brown rice syrup instead of sugar, but only half the amount and it’s plenty sweet. It’s so good. I’ve eaten way too many of them so I appreciate you helping me eat them! If you want the recipe – I used this recipe but I substituted the sugar for brown rice syrup – about a cup. (I did add about 1/4 cup of sugar, but other than that – its sugar free!)

I would also make you some deep dark roast expresso with my new Bialetti Moka Express. It’s the best coffee ever. Do you like light roast? I’ll have to fire up the Keurig for you then. I would probably ask you which cup you want, because I am one of those types that has specific cups for specific moods. Whenever I travel, I bring home a coffee cup from that place. All my cups are different: would you like Clearwater Beach? Puerto Rico? Or perhaps my pretty Costa Rica hummingbird cup?

Then, once we are settled with our chocolate no bakes and our great coffee, I might ask you what you’ve been up to. After hearing about your adventures, I might get all excited and tell you that today is the first day of our 31 Day Inspired Blogging Challenge on Facebook! Oh! Do you want to join us? We are just getting the party started. If you haven’t heard of the Inspired Blogging group, it’s a close knit Facebook group, where we comment on each other’s blogs. I just took it over with my friend, Nanette Levin, and we are excited to start this challenge. My friend, Michele Bergh, used to run the group and when she did, she would host quarterly blog challenges. She gave up running the group a while ago, so this is the first challenge that we’ve had in the group for a while. It will be fun. The group is full of artsy free thinker types, so if that’s you, you’ll fit right in.

Then we would probably talk about the garden, because Spring is in full bloom in Minnesota! I still have a little digging prep to do and then we would wander outside to check on the plants and see how they are doing. If you are a fellow gardener, I might offer you some of my tiger lilies since I am changing things around this year and want to get rid of them all. Sigh. After a while, we’d say goodbye and promise another date soon! Have a wonderful Saturday!
